Festive and Healthy Red, White and Blue Salad

Whether you are grilling outside or dining indoors, this simple, festive and healthy salad is sure to be a holiday crowd pleaser!
Spring mix salad greens (i.e. arugula, baby spinach)
Goat cheese, crumbled
Candied pecans (or walnuts or almonds)
Sprinkle with salt and pepper, and drizzle with best quality balsamic vinegar and olive oil,
OR use the following recipe to dress the salad.
Honey Mustard Lemon Vinaigrette
1/4 c. water
1/4 c. honey
1/2 c. apple cider vinegar
1/2 c. olive oil
juice from 1/2 of a lemon
1 T. dijon mustard
2 t. salt
1/2 t. pepper
1 T. shallot, minced
Whisk all ingredients until blended.
